Looking for a light and refreshing summer dessert that’s plant-based, beautiful, and full of goodness? This homemade Matcha Jelly with Agar-Agar is a favourite here at Midori Matcha, and one I’ve personally tested and made at home using our Everyday Uji Matcha (Vitality).
It’s a gently sweet, cooling jelly that uses agar-agar, a natural seaweed-based setting agent, making it a perfect alternative to gelatin for vegan and gluten-free diets. With a smooth texture and the delicate, earthy flavour of ceremonial-grade matcha, it’s ideal for warm days or when you want to impress guests with minimal effort.
I served mine with a few fresh strawberries and edible flowers and it looked (and tasted) absolutely beautiful.

Ingredients:

2 cups (470 ml) water
-
¼ cup (50 g) granulated sugar
-
1½ teaspoons (3 g) agar-agar powder
-
2 teaspoons (4 g) Midori Matcha Everyday Uji Matcha (Vitality)

1 tablespoon (15 ml) hot water
Instructions:
1. Whisk the matcha
In a small bowl, sift and whisk the matcha with 1 tablespoon of hot (but not boiling) water until smooth and lump-free. Set aside.
2. Activate the agar
In a saucepan, combine 2 cups of water and the agar-agar powder. Bring to a gentle boil while stirring, then simmer for 2–3 minutes, stirring constantly to fully activate and dissolve the agar.
3. Sweeten
Stir in the sugar and continue to simmer for another minute until the sugar is fully dissolved.
4. Combine
Remove the saucepan from the heat and immediately whisk in the matcha mixture until well combined and evenly coloured.
5. Set
Pour the mixture into moulds or a shallow dish. Let it cool at room temperature, then refrigerate until set (usually 1–2 hours).
