Inspired by a trusted recipe from BBC Good Food, we’ve added our own green flourish: a spoonful of matcha, bringing not only colour and character but a gentle energy rooted in centuries of Japanese tradition.
These pancakes are light, gluten-free, and perfect for peaceful weekends or slow mornings — a small ritual of wellbeing, crafted with care.
🥞 Ingredients:
- 125g gluten-free plain flour
- 1 tsp gluten-free baking powder
- 1 tbsp golden caster sugar
- 1 large egg
- 250ml milk (or plant-based milk alternative)
- 1 tbsp sunflower oil, plus extra for cooking
- 1 tsp Midori Matcha Everyday Matcha (sifted for smoothness)
🌿 Method:
- In a large bowl, whisk together the flour, baking powder, sugar, and sifted matcha.
- In a separate jug, beat the egg with the milk and oil.
- Gradually whisk the wet ingredients into the dry until the batter is smooth.
- Heat a little oil in a non-stick pan over medium heat.
- Pour small ladles of batter into the pan. Cook until bubbles appear on the surface, then flip gently and cook until golden underneath.
- Serve warm with your favourite toppings — fresh fruit, maple syrup, or even a light dusting of matcha.
